The Naked Truffle was founded upon the desire to provide quality, unique, and flavorful chocolate to all. The founder and owner is a classically trained chef. Stefan Markov kicked off his career working as a guest cook for the Governer General of Canada and the Republic of France's Embassy in Canada. He discovered a love for pastry while completing an internship in the French Alps region at the world-renowned Abbaye the Talloires. Following that, Markov worked as a pastry chef under fourth-generation chocolatier from Provence, Christian Chaloin. 

                                  

 

In 2011, Markov moved to Chicago and worked for restaurants such as the prestigious BOKA, Restaurant Michael (now Aboyer) in Winnetka, IL and most recently as an executive chef at Restaurant Valor in Glencoe, IL. Upon taking a step back from a bustling restaurant career, Markov decided to begin working with the chocolate flavors he had grown to love, from Tanzania's acidity and intense cocoa bitterness to the spicy and woody notes of Mexico and the sweetness of Ghana.

For Markov, The Naked Truffle is a return to working with chocolate, sourcing ingredients that focus on sustainability and preserving the planet. Finally, it is an ode to his one-year-old son, the sweetest little truffle around.
